Baked Penne with Spinach
For this recipe, you will require Mozzarella cheese, Parmesan, baby spinach, penne, whole tomatoes, crushed tomatoes, sun-dried tomatoes, garlic, olive oil, balsamic vinegar, kosher salt, and black pepper. You can also have some green salad, for serving.
Take a large saucepan and heat the olive oil. Cook garlic and sun-dried tomatoes in it, and add crushed tomatoes and sliced pieces of whole tomatoes along with vinegar, salt, and pepper to it. Cook until it is thickened to form the sauce.
When done, boil water in a large pot with some salt and cook penne in it. In another pan, add the prepared sauce and spinach, and cook until the spinach wilts. Add the pasta drained from the pot and mix well.
Take a baking dish and place half of the pasta in it. Sprinkle some cheese over it. Place the next layer of pasta and cheese topping over it. Bake in an oven for 15- 20 minutes, and serve it with the salad.
Broccoli and Three-Cheese Lasagna
For this recipe, you will require Ricotta cheese, broccoli, Mozzarella cheese, Parmesan, marinara sauce, lasagna noodles, heavy cream, mixed greens, olive oil, lemon juice, kosher salt, and pepper.
Combine Ricotta, 2 cups of Mozzarella, broccoli, ¼ cup Parmesan, salt, and pepper in a large bowl. Mix the marinara sauce and cream in another bowl. Take a baking dish, and place a small layer of sauce and cream into it. Arrange two noodles, part of sauce and broccoli mix over it.
Repeat the noodle-sauce mix layer twice and top it with Mozzarella and Parmesan. Tightly cover the dish with an oily foil and bake them for half to one hour in an oven, until the noodles are tender. After that, uncover the pan, and bake it for another 15 minutes until the top turns golden brown. Mix in the greens, lemon juice, olive oil, salt, and pepper, and serve with the lasagna.
Bonus Recipe: Creamy Rigatoni with Broccoli and Brie
You will need dried rigatoni, steamed broccoli cut into half-inch pieces, roasted pine nuts, half-inch pieces of Brie, kosher salt, and pepper, for this recipe.
Cook and drain the pasta according to the directions. Add nuts, broccoli, Brie, salt, and pepper into a pot along with the pasta, and stir them well until the cheese melts. That’s it! Your creamy Rigatoni is ready.
