Easy Cheese Soup Recipes

Broccoli Cheddar Soup

For this, you will require:

  • Chopped onion
  • Flour – ¼ cup
  • Sliced carrots
  • Sharp cheddar cheese
  • Chopped broccoli
  • Sliced celery
  • Chicken stock
  • Milk
  • Butter
  • Ground black pepper
  • Salt

Directions

  • In a saucepan, whisk together flour and butter in medium heat. To prevent the flour from burning, add 2 teaspoon of milk and cook until the granular texture of the flour is lost.
  • Now pour milk and chicken stock gradually to the skillet, and cook until the mixture is thickened.
  • In a skillet, melt one tablespoon of butter, and sauté onions in it.
  • Add the vegetables carrots, broccoli, celery, and sautéed onion to the saucepan. Cook until the vegetables are tender.
  • Now add the cheese (shredded) in the saucepan, and stir until the cheese melts well. Add salt and pepper according to taste, and serve hot.

Roasted Root Vegetable Soup with Grilled Cheese Croutons

For this, you will require:

  • Sweet potatoes – cut into cubes
  • Carrots – sliced
  • Parsnips – sliced
  • Celery – sliced
  • Chicken or vegetable stock
  • Honey
  • Hot sauce
  • Extra virgin olive oil
  • Slices of white bread
  • Sliced cheddar cheese
  • Salt and pepper

Directions

  • Roast carrots, parsnips, potatoes, celery coated with the oil and seasoned with salt and pepper.
  • Make puree of the vegetables and transfer them to a soup pot with the stock, and season with sauce and honey.
  • Make cheese sandwiches with two slices of bread and two slices of cheese. Cut them into small cubes. Coat them with cooking oil and bake them until the cheese melts.
  • While serving, pour the soup into the bowl and float some sandwich croutons in it. Your special sandwich floating soup is ready.

For this, you will require:

  • Chopped Onions
  • Flour
  • Chopped spinach
  • Heavy cream
  • Shelled and deveined shrimp, cut to small pieces
  • Milk
  • Butter
  • Chicken broth
  • Crumbled Blue cheese
  • Salt and pepper

Directions

  • Sauté the onions in a saucepan with butter. Add flour, chicken broth, and milk to it and cook for five minutes.
  • Add cheese to the mixture and keep stirring until the cheese melts. Now add spinach, cream, salt and pepper, and boil the soup.
  • Add the shrimps to the boiling soup and cook until the shrimps are tender. Serve hot.
